CUA 160 Contemporary Desserts
2 Credit (.5 Lecture 1.5 Lab 0 Shop)
14 Hr/Wk (2 Hrs. Lecture 12 Hrs. Lab) *4 wks
This course will use all the previous course knowledge to make some of the more complex desserts and dessert components. We will talk about the new dessert trends and how to adapt them to traditional dessert items. Hot and cold desserts will be explored giving students the ability to work with mousses and creams, ice creams and some classic desserts like Bananas Foster or Crepe Suzette. Small portion desserts will also be discussed. Prerequisite: CUA 155.
