We will explore several of the special diets and allergies that many chefs work around on a daily basis. International cuisines will be discussed, what methods they use and what makes their foods different from others. Simple wines will be discussed, talking about nose, legs, color, grape varieties and pairings. Prerequisite: CUA 150.
